With the recent seasonal reopening of The Grill acting as a muse, Dwayne is now pleased to introduce a new monthly wine flight menu in The Grill. Presented alongside our wine cellar list, the wine flight portions allow you to compare the taste and aroma, and pair with an array of European-inspired small plates by Executive Chef David Werly.
Inspired by our January Wine Dinner Series, we begin the year with three two-ounce tastings from TENUTA DELL’ORNELLAIA. Founded in 1981, in a beautiful, unspoiled part of Tuscany, Tenuta dell’Ornellaia’s one goal from the beginning was to produce truly outstanding wines. Since then, passion and dedication, coupled with a unique terroir and an extraordinary microclimate, have brought the Tenuta dell'Ornellaia's prestigious labels great success and recognition as one of the most important wineries in the world.
Commence by tasting LE VOLTE dell’Ornellaia, followed by LE SERRE NUOVE dell’Ornellaia, and highly regarded ORNELLAIA dell’Ornellaia. The two ounce tastings of each wine will be available for USD 68 per person throughout the month of January.

The Grill Season Opening
The Setai is pleased to announce that the sights, sounds and flavors of The Grill are once again open for the season. Located just beyond The Bar, the hotel’s stylish venue will unveil a new menu which will be available for dinner Wednesday through Sunday evenings.
Set amid an elegant atmosphere of warm wood, brick and pearl, The Grill presents European-inspired small plates expertly prepared by Michelin-star awarded Executive Chef David Werly and his skilled team of chefs. A fusion of innovation and tradition, The Grill features an ingredient-driven menu focused on the finest sourced and seasonal products available.
The sophisticated selection of seasonal dishes debuting include Octopus Carpaccio Florida Prawn Tempura with Baby Gem Lettuce, Orange and Avocado Vinaigrette, Homemade Cocoa Pappardelle with Cervena Venison Ragout & Javanese Black Pepper, Sautéed Calamari, Pata Negra and Tomato Confit with Garlic Chips, Squid Ink Sauce & Aioli, and Apple Tarte Tatin with Crème Fraiche & Vanilla Ice Cream for two.
Dishes are served tapas-style in a relaxed and intimate atmosphere, complemented by creative cocktails and thoughtfully selected wines by The Setai’s well-versed sommelier. Gather where peace and energy meet at The Bar for a signature cocktail such as the Chili Passion Martini and continue to The Grill where an interesting array of savory small plates await to be discovered and shared among friends.
The Grill also invites visitors to whet the palate with a complimentary glass of Taittinger Champagne on Thursday evenings, as the allure of live Thursday Night Jazz plays in the open air of The Courtyard.
